When temperatures hit 80°F or higher, employers must provide enough potable water for each employee to drink at least one quart per hour for the entire shift. At 95°F, additional cool-down measures kick in. Water has to be fresh, suitably cool, and located as close as practicable to the work area.

A 40-person construction crew on a 90°F day in East San Jose needs at least 40 quarts of potable water per hour, which is 320 quarts over an 8-hour shift, which is 80 gallons. That’s the floor.
